Guava Raita in Marathi
Time: 10 minutes
Servings: 2 to 3
Ingredients:
2 medium Guavas, ripened
1/2 cup malaiwala yogurt (homemade) (Tip 4)
2 green chilies, crushed into paste
2 tbsp cilantro, finely chopped
1/8 tsp mustard powder
2 tsp sugar (or to taste)
salt to taste
Method:
1) Wash Guavas. Trip the end of the guavas. Grate the guavas with a medium hole grater. Stop grating when you see seeds. Do not take the seedy part. Just grate the upper layer.
2) Whisk the yogurt. Add grated guavas. Then add green chili paste, cilantro, mustard powder, sugar and salt.
3) Mix well and check the taste. If you feel that raita is too thick then add 1-2 tbsp yogurt or 2-3 tbsp milk. Also adjust the sugar and green chilli to suite your palate.
Tips:
1) Do not use overriped or raw guavas. Guava should be well ripened.
2) You can make small pieces of guava instead of grating. grated or chopped, either way do not use seedy core of guava.
3) Yogurt should not be sour in taste.
4) If you don't have malaidar yogurt, then hang around 3/4 cups yogurt in a clean cloth for 1 hour. Add 2 to 3 tbsp malai (milk fat) in it. Use this mixture to replace malaiwala yogurt.
