Avla Sarbat

Amla Sharbat in Marathi

Time: 15 to 20 minutes
Servings: 8 to 10

Ingredients:
7 to 8 Amla (Indian Gooseberry)
1 tsp grated ginger
Sugar
2 tsp lemon juice

ethod:

1) Steam cook amla in pressure cooker upto 2 whistles. Remove the pit and use only pulp.
2) Use sugar 1.5 times of the pulp (for 1 cup pulp use 1.5 cups sugar).
3) Grind sugar, ginger, amla pulp and lemon juice together. Make a thick paste.
Store it in the refrigerator. Use plastic or glass jar to store the pulp.
To serve amla sharbat, add 3 tbsp of amla pulp, 2 pinches of salt and a glass of cold water.

Tips:
1) Strain the pulp after grinding to remove fine particles of amla. (Amla particles taste good in this drink, but in-case you don't want them, use this method.)
2) Use clean and dry jar to store amla pulp. Also use clean and dry spoon.
3) You may store it in the freezer. Fill the ice-cube tray with the pulp. Once pulp solidifies, then store them in a Ziploc bag. Put this bag in the freezer again. (If there is a problem of power-cut, then do not freeze the pulp.)
4) You can add little black salt in the drink if you like the flavor.
