Potato Frankie in Marathi
Time: 40 minutes
Makes: 6 Frankie
Ingredients:
for potato rolls
1 cup Mashed potato (Boiled, peeled and then mashed)
1/2 cup bread crumbs
1 tbsp green chili, crushed
1/2 tsp chaat masala
1/2 tsp garam masala
salt to taste
For Cover
3/4 to 1 cup Maida
1 tbsp oil
Salt to taste
sufficient water to knead the dough
other ingredients:
1/2 cup finely chopped onion
2 tbsp vinegar
1 tsp finely chopped green chili
2-3 pinches salt
Chaat masala to taste
Method:
Potato rolls
1) In a mixing bowl, add mashed potato, green chili, bread crumbs, chat masala, garam masala and salt. Knead well and divide in 6 equal portions. Shape them like capsule. Deep fry or shallow fry them (I shallow fried them)
2) In a mixing bowl add maida, oil and salt. Add water and make a pliable dough. Cover and let it rest for 15 minutes.
3) Divide the dough in 6 equal portions. Take one portion and roll it to a thin roti. Roast over hot tawa. Apply little oil while roasting. When roasting second side, turn the heat to low.
4) Reheat the potato rolls in microwave. Put one roll in the center of roti. Sprinkle Chat masala, green chili, little salt, onion and 1/2 tsp of vinegar over potato roll. Wrap it and serve hot.
Likewise finish up making remaining Frankies.
Tips:
1) Using Maida for wraps is very essential for the taste and texture. Wheat flour wraps or any kind of wraps won't give the same results.
